We’ve been cooking at home a lot lately (it’s hard to do anything else due to the quarantine), and eating the same meals on repeat can get boring. It’s great to have a few recipes in your arsenal if you have a busy week ahead and don’t want to bother with looking up recipes. When we have so much spare time on our hands, it’s been nice to experiment with a few new meals.
The other night, we made chicken with a yummy maple sauce, roasted carrots, and rice. It was delicious, easy, and healthy!
I also wanted to try out the “Best Enchiladas Ever” from Gimme Some Oven and it did not disappoint. So tasty! 🙂 They were a lot easier to make than I expected too, which is always a plus.
The final product, served with guac and sour cream. Drum roll please…
The picture isn’t the prettiest, but I promise it was yummy enough to make up for it!
The enchiladas have onion and peppers, and we added tomato and guac on the side, so they’re packed with nutritious foods.
I love to drink a glass of wine when I’m cooking. It makes the cooking experience so enjoyable and something I look forward to!
