I don’t know about you, but I love a good healthy pancake recipe. Especially one that leaves you feeling satisfied, energized, and ready to take on the day. I love all pancakes, and there’s room for traditional pancakes (or icing-doused Cinnastack pancakes from IHOP…) in any balanced diet. But sometimes, you want a lighter, easier on the stomach, breakfast before a workday, workout, etc. If that’s you, then these simple, healthy pancakes will hit the spot!
Simple 5-Ingredient Healthy Pancakes
Let’s face it, we’re all busy. No one has time for a complicated pancake recipe that’s going to take up an hour of your already hectic morning.
Simplicity is one of the main things I look for when finding recipes. So my own recipes are always as quick and easy as possible. That way, we get you and your loved ones fed, and out the door ASAP.

Obviously, it’s chocolate chips! If you’re not a chocolate lover, you can easily leave these out. But I can’t make any baked goods without throwing in some chocolate chips.
The gooey melty chocolate chips are the best part, in my opinion, and make any baked good a 10/10.

Easy Healthy Pancakes Recipe
For these healthy pancakes, you’ll need the following ingredients:
- bananas
- vanilla extract
- eggs
- flour
- baking powder
- Optional: chocolate chips (I love the Enjoy Life dark chocolate chips for their simple ingredients)
I’d also recommend toppings such as berries, nut butter (Justin’s maple almond butter is the BEST), and maple syrup or honey.
These will only take about 5 minutes to prep and 10 minutes to cook. If you have a pancake skillet, it’ll go even faster. I just have a measly fry pan, so I have to do the pancakes individually (or in pairs for smaller cakes.)
The FLUFFIEST simple banana egg pancakes
Equipment
- fry pan or pancake skillet
Ingredients
- 2 bananas ripe
- 1 tsp vanilla extract
- 2 tsp baking powder optional to help rise
- 2 eggs
- ¾ cup flour
Optional:
- ¼ cup dark chocolate chips these have added sugar of course
Toppings:
- Berries
- Peanut butter
- Maple syrup/Honey
Instructions
- On a plate, mash bananas fully.
- Add bananas, vanilla extract, and baking powder to a large bowl. Whisk until fully combined.
- Add eggs to the bowl and whisk until combined.
- Slowly pour flour bit by bit into the bowl, mixing as you pour.
- In a large pan over medium-low heat, melt a bit of butter to coat the pan.
- Pour pancake batter into small portions on the pan (you’ll probably only have room for 2 small pancakes on a large pan.) If you desire, add dark chocolate chips to the pancakes, and use a spoon to cover each with a bit of batter until fully encased (this will help to prevent the chocolate getting overcooked or falling out of the pancake when flipped.)
- Cook until slightly browned on the bottom, flip, and cook until this side is slightly browned as well. (If you want to keep your pancakes warm while the rest cook, place them in a warm oven on a foiled baking sheet.)
- Top with whatever toppings you want! I like melted peanut butter, berries, and maple syrup. Enjoy!
