While I don’t have a gluten allergy or Celiac’s disease and don’t absolutely need to eat gluten-free, I am sensitive to gluten and get stomach aches or feel really tired after eating foods with gluten. I definitely don’t always eat gluten-free and honestly most of the time I don’t, especially right now with so many places being closed, foods being sold out, and just not wanting to go out grocery shopping more than necessary.
When I do eat gluten-free recipes, I always feel better and more energized than after eating gluten. This chickpea pasta meal is the perfect, EASY dinner recipe for weeknights when you don’t feel like cooking for an hour+, but want a homecooked meal.
Since this is a 30-minute easy dinner, I used all store-bought foods and didn’t actually make any of this from scratch. While that’s always better and much tastier, you don’t always have the time. I used Banza chickpea pasta (spirals), half a jar of classic pasta sauce from Target, and frozen gluten-free meatballs. You can substitute the gluten-free meatballs for regular if you aren’t looking for a gluten-free meal.
I threw the meatballs in the oven then cooked the pasta while they were cooking. Then I warmed up the sauce and everything came together perfectly at the same time. Throw a little parmesan on top and voila, easy 30-minute weeknight meal.
