We make this breakfast multiple times a week because it is so healthy and easy!

Two eggs (over easy for me), two pieces of wheat toast, smashed avocado. I normally use half an avocado per piece of toast. I cook the eggs over easy with butter, salt and pepper. I just throw some salt and pepper in the avocado as well, along with lime juice and garlic if I’m feeling spicy. Topped with some hot sauce and served with a piece of fruit on the side.
I can throw this together for both Jeremy & I in less than 10 minutes, making it ideal for weekdays of weekends.
