Oatmeal is my go-to breakfast in the mornings because it’s quick, easy, and healthy. But sometimes, you get tired of eating the same oatmeal recipe over & over. I can eat my overnight oats 50% of the time, but I’m not the type of person that can eat the same thing on repeat everyday. I need variety. And that means more options for how to make your go-to breakfast. So I decided to come up with a yummy baked oatmeal recipe!
Blueberry Nutella Baked Oatmeal
This is the perfect meal prep oatmeal recipe because it makes 6 servings and stays good all week. It’s delicious heated back up, or even eaten cold. I’m in a rush a lot of days to get to work. *I’m not great at actually getting up early enough to have time to get ready… So having breakfast already prepped and ready to head out the door is ideal! Also, the fact that there’s Nutella on all my breakfast recipes never hurt. 😉
So, I introduce to you, Blueberry Nutella Baked Oatmeal!
Step by Step:
First things first, I mixed the oats, almond milk, honey, protein, and blueberries together in a medium bowl. The protein I’ve been obsessed with lately is this vegan protein with superfoods. Vegan protein sits better with my stomach. And this protein has fiber, only 1 g of sugar, and the health benefits of superfoods, like veggies, herbs, and berries. Sounds gross right? But the vanilla flavor is delicious and you don’t taste anything other than vanilla somehow!
I used Califia unsweetened vanilla almond milk, but you can use whatever you prefer. I also only had frozen blueberries on hand which worked perfectly fine! Just defrost them in the microwave for about a minute first, and it’ll turn out perfectly.
Once the mixture was all combined, I greased a 7×11 pan with butter and poured it on in. You can use an 8×8 or 9×9 pan if you don’t have a 7×11, just watch the cooking time to make sure it doesn’t get too done.
After the mixture was poured in, I drizzled Nutella on top. Use as much as you’d like, but I love chocolate so I put more on top of each piece after it was done too!
Bake at:
350 for 35-45 minutes (or until no more liquid patches are seen). And voila! Delicious, repeatable, blueberry Nutella baked oatmeal.
It doesn’t taste healthy but it’s chock full of fiber, healthy carbohydrates, vitamins A & E, B vitamins, calcium, and iron. I’ve been eating this every day on repeat and haven’t gotten sick of it yet! The warm juicy blueberries, mixed with hearty oatmeal, and sweet Nutella is the perfect flavor combo.

Blueberry Nutella Baked Oatmeal

Ingredients
- 1 cup oats
- 3/4 cup almond milk
- 1/4 cup honey
- 1 scoop vanilla protein powder
- 1/2 cup blueberries (frozen or fresh)
- 2 tbsp Nutella (or use more if you like!)
- butter to line the pan
Instructions
- Preheat oven to 350. Mix together oats, almond milk, honey, protein, and blueberries in a medium bowl.
- Line a 7×11 pan (or 8×8/9×9, just change baking time accordingly) with butter. Pour in the mixture.
- Top with Nutella. Put the pan into the preheated oven and let cook for 35-45 minutes, or until no wet spots show in the baked oatmeal.
- Voila! Top with more Nutella to your liking and serve with a big cup of coffee.
