Do you guys get sick of eating the same thing for breakfast every morning? I know I do! If I eat something for 3+ days in a row, I don’t even want to look at it for the next month. I’m all about variety and switching it up when it comes to meals. Especially when it comes to breakfast! Since it’s the best meal of the day (don’t @ me). 😉
So I thought I’d write up a post on the variety of healthy, balanced breakfasts I’ve been munching on lately. And stay tuned for a delish banana bread recipe from Jeremy’s Mom! Moms always have the best recipes.
I’ll start things off with the breakfast recipe we’ve been eating pretty much every Saturday/Sunday.
1 – Over easy eggs with avocado toast & toast with butter. (With a side of banana bread yummm).
I’ve been eating Dave’s Killer Bread non-stop lately and it is SO GOOD. I didn’t get it for so long because it’s a little on the pricier side, but it’s worth it. It’s so soft and doughy for multi-grain bread. I can’t get enough! As far as my avocado toast, I’ve been seasoning the mashed avocado with salt and a little lemon pepper and that’s it. Simple but scrumptious!
2 – Peanut Butter Banana Green Smoothie!
I wouldn’t normally eat this as the entirety of my breakfast, but if you’re on the go you totally can. It’s balanced with healthy fats, healthy carbs, and protein. It’s also versatile for many diets including vegan, vegetarian, and gluten-free.

3 – Peanut butter toast with honey, orange slices, and more banana bread!
This is another easy go-to if you only have about 5 minutes to put together breakfast. The banana bread is, of course, pre-made, and the rest of it can be thrown together in no time at all!
4 – My Easy Chocolate Covered Strawberry Overnight Oats!
These babies never get old and are so simple to make. If you have 5 minutes the night before to throw everything together, you’re golden in the morning. It makes your morning 10x easier to have breakfast pre-made and ready to go!
5 – My Blueberry Nutella Baked Oatmeal.
If you have a little more time in the morning, this is the sweetest and most decadent way to start your day! Or you can prep this ahead of time over the weekend and it stays good all week. The recipe makes 6 servings, so it’s the perfect breakfast meal prep. And if you’re a chocolate lover like me, you’ll absolutely love this recipe!
Now… What you’ve all been waiting for… The banana bread recipe! I know there’s a billion out there, especially right now. But I promise this one is top notch.
Jeremy’s Mama’s Banana Bread:
- 1 egg
- 1 cup sugar
- 1/4 cup melted butter
- 3 overly ripe bananas
- 1-1/2 cup flour
- 1 tsp baking soda
- 1 tsp salt
- I added in walnuts and dark chocolate chips to taste as well!
Preheat oven to 325 F. Beat the egg slightly. Add sugar and butter. Add mashed bananas. Mix everything. Add in slowly: flour, baking soda, and salt. Stir in dark chocolate chips, walnuts, or whatever you like in your banana bread. Bake in a greased loaf pan for 45 minutes.
