I’d been thinking lately that I wanted an easy snack to have on hand for when I needed a little pick me up. Like at 3 o’clock in the afternoon when I’m dragging, or once I get home from work and want to do a workout. So that’s where these delicious mocha chocolate chip energy balls come in!
The Easiest Pick-Me-Up: Energy Balls
Lately, I’ve been feeling bored with all of the snacks we have on hand. I would normally go for a granola bar and piece of fruit as a pick me up snack, but that just hasn’t been working anymore. It felt like I needed to switch it up and try something new and exciting!
I have wanted to make an energy ball recipe for a while now, so now (in my snack drought) is the perfect time! You can eat these as a pre-workout snack, a pick-me-up throughout the day, or with your breakfast and morning coffee for that extra little kick.

You guys already know how much I love (can’t live without) coffee. I’m not a normal functioning human in the mornings until I’ve had my iced coffee.
And with the medicine I take, I have to wait an hour after I wake up to drink coffee or eat anything… So you can only imagine how much of a grumpy human I am in that first hour of the day. Anyone I’ve lived with I’m sure would agree with me on that!
I posted my everyday iced coffee recipe on the blog a while back. But I wanted to figure out a way to incorporate my beloved coffee into a healthy snack!
So I give you… Mocha Chocolate Chip Energy Balls!
No-Bake Mocha Chocolate Chip Energy Balls Recipe!
I started off by combining 1 cup of oats, with 1/2 a cup of peanut butter, 1/2 cup of flaxseed, 1/3 cup of honey, 1 tsp vanilla extract, 1/2 cup espresso chocolate chips, 1 tsp cocoa powder, and 1 tbsp finely ground espresso.
I used Starbucks espresso roast (whole bean) and ground it up using an automatic coffee grinder! < This one is really similar to the one I’ve been using for the past few years and LOVE. Sadly, they don’t sell the exact one I bought on Amazon anymore.
The ground espresso and caffeine from the chocolate chips give these guys the extra kick they need! They will definitely keep you going throughout the day (or during your workout).
You can sub out the peanut butter for almond butter or nut butter of your choice. As well as the honey for maple syrup, or any other sticky sweetener you enjoy. I love honey because it holds the balls together really well. 😜
You can also add in chia seeds, protein powder, or anything else you want to throw in. These babies are super customizable and can be changed out pretty easily.
P.S. I already have another recipe for a different flavor that I’m really excited about trying! I had been planning on doing this other top-secret recipe in the first place, but then saw the mocha chocolate chips at the store and got inspired to do these instead. But I will definitely be releasing the other one soon. 😏
Directions
Mix all of the above ingredients together in a medium bowl. Cover the bowl and chill it in the fridge for about 1 hour, or until it is fully chilled.
Once the mixture is chilled, take it out of the refrigerator and roll it into 1-inch balls. Then voila, it’s that simple! You can store these in the fridge after if you don’t eat them all in one sitting 😉 .
