I always love a good week in eats or what I eat in a day post… So I figured I’d throw one together for you guys, in hopes that you like them too! I’m sharing a few of my healthy breakfast recipes, lunches & dinners, and even a dairy-free dessert. Hope you guys enjoy!

Breakfasts
This chocolate covered strawberry Greek yogurt parfait was so delicious! It makes the perfect sweet breakfast or midday snack. Here’s the recipe if you want to try it for yourself:
1 plain 2% Greek yogurt
1 tsp honey (or to taste)
1/4 tsp cinnamon
~5-6 sliced strawberries
1/8 cup dark chocolate chips
1-2 tbsp (your favorite) nut butter
- mix together your yogurt, honey, and cinnamon in a small bowl
- top with strawbs, nut butter & chocolate chips!
This was the most flavorful apple cinnamon oatmeal I have ever had! I’m definitely saving this recipe to make again & again.

Jeremy & I both had Friday off of work – so we decided to treat ourselves and try out a new gluten-free/vegan donut place! I’ve been eating gluten-free ever since my 30-day challenge. I’ve felt 10x better eating this way and plan to continue (as often as I can, I know there will still be times when I decide to eat foods with gluten).
We went to Hale Life Bakery in St. Pete and tried out the pumpkin cream cheese, cookie monster, and blueberry lemon. They were all incredible!! They obviously tasted a little different than regular donuts (being gluten-free & vegan). But I would go back again & again – they were so tasty!
Lunches
This has been my go-to lunch lately! It’s easy and so delicious – never gets old. 2 pieces of gluten-free multigrain toast with smashed avocado with salt, pepper, and everything but the bagel seasoning. I’ll top it with a tomato slice if I have some on hand. An over easy egg and some type of berries or fruit on the side! Delish.
I made this tasty chicken chili the other night and have been eating it for lunch on the reg. Here’s the recipe I used, but I cooked mine in the crockpot instead of on the stove. I cooked the chicken on the stove first (not sure if I needed to or if it would have cooked through in the crockpot). Then added everything to the crockpot for 4 hours on high. It turned out so yummy!
I mostly just used the crockpot instead because 1. it’s super easy. 2. I love using these crockpot liners! It makes clean up SO much easier.
Dinners
Jeremy made this homemade orange chicken and broccoli the other night and it was delish! I’m not sure what recipe he used… But if anyone wants to try it out, comment below & I’ll hunt down the recipe for ya!
Desserts
I’ve been in a huge hot chocolate mood these past few weeks. It’s still not really even cold here in Florida, but it’s at least not in the 90’s anymore. Which to me calls for hot chocolate! 😉
This is my pumpkin white hot chocolate with almond milk. It turned out so sweet, warming, and cozy! I have a completely dairy-free version shared in the post, but I made mine with regular white chocolate chips.

Hook me up with that orange chicken recipe!!! That looks so good! I need to bring the avo toast back into my life too. And the apple cinnamon oatmeal… I don’t even like oatmeal and that sounds insanely good – I will be adding it to my breakfast rotation this week to test it out. As always, thanks for the inspo!!
