Tis the season for delicious gingerbread energy balls, am I right?!? I don’t know about you guys, but around the holidays, I can (and do) eat my weight in Christmas cookies. While I absolute LOVE that about the holiday season (it may be one of my favorite parts), it’s nice to have healthier snacks on hand as well. While still being in the holiday spirit, of course!!
Gluten-Free Gingerbread Energy Balls (with Cream Cheese Drizzle)
gingerbread energy balls
- 1 cup gluten-free oats (use regular oats if you’re not needing this to be GF)
- 1/2 cup almond butter
- 1/2 cup flaxseed
- 1/3 cup of honey (you can sub maple syrup to make fully vegan)
- 1 tsp vanilla extract
- 1/2 tbsp cinnamon
- 1/2 tbsp allspice
- 1/2 tbsp ginger
- 1/4 tbsp nutmeg
- 1/4 tbsp ground cloves
- Optional: holiday sprinkles for topping!
- Mix all of the above ingredients (besides sprinkles) together in a medium bowl. Cover the bowl and chill it in the fridge for about 1 hour, or until it is fully chilled.
- Once the mixture is chilled, take it out of the refrigerator and roll it into 1-inch balls. Then top with the cream cheese drizzle (below) & sprinkles.
Cream Cheese Drizzle
- 2 oz (softened) cream cheese (use non-dairy cream cheese for vegan substitution)
- 1/2 tsp vanilla extract
- 1/4 cup powdered sugar
- 1-2 tbsp French Vanilla Nutpods oat milk creamer (use code vitalityvixens for 15% off!)
- Beat the cream cheese and vanilla extract together until smooth & creamy. Slowly add in the powdered sugar, while still beating the mixture.
- Stir in your Nutpods oat milk creamer, 1 tbsp at a time. Add in as much as you need until it is the right consistency (to your preference) for the drizzle.
