It’s beginning to look a lot like Christmas!! JK, it’s still in the 80’s here in good ol’ Florida. But even with the heat here, I’m still getting into the holiday spirit. One of my favorite ways to make things feel more Christmas-y is to whip up delish holiday beverages! Like this dairy-free peppermint mocha. It’s so easy to make and I guarantee you’ll be singing jingle bells after you drink one. 😉
An Easy Holiday Drink: The Dairy-Free Peppermint Mocha
I’m not vegan, but I prefer oat milk & almond milk over dairy. It tastes better (to me) and my stomach feels much better afterward. If you want to make a dairy version of this drink, you can easily swap out the oat milk for dairy milk & the non-dairy whip for regular.
I’ve been loving making all kinds of lattes & other espresso drinks with my espresso machine that I got for my birthday. One thing that makes whipping up hot drinks way easier is a steaming pitcher. I just received the Zulay Kitchen 32 oz steaming pitcher and couldn’t love it more! It’s HUGE so you can make multiple drinks at once. (If you’re making drinks for other people or just want a couple for yourself ;)).
You can get your own steaming pitcher on Zulay’s website. Don’t forget to use code VITALITYVIXENS10 for 10% off!
So… Let’s get right into the dairy-free peppermint mocha recipe!
Ingredients You’ll Need:
- 2 shots espresso (I use this [inexpensive] espresso machine & Starbucks espresso)
- 1 cup oat milk + 2 tbsp (you can substitute with your milk preference)
- 1 oz Nutpods creamer (use code VITALITYVIXENS for 15% off)
- 1/4 tsp vanilla extract
- 1 tsp cocoa powder
- 1 tbsp chocolate chips
- 1-2 tbsp honey (2 tbsp if you like your coffee sweeter)
- 1 tsp peppermint extract
- optional: (dairy-free) whipped cream & chocolate shavings and/or crushed peppermint for topping!
Directions:
- In a small saucepan over low heat, combine the chocolate chips, cocoa powder, 2 tbsp oat milk, peppermint & vanilla extracts, and honey. Stir occasionally and keep it on the heat until everything melts together into a saucy consistency. If you need to, bump the heat up 1 or 2 notches.
- Steam your oat milk & Nutpods creamer together in your steaming pitcher. (I would recommend the Zulay steaming pitcher and the Sowtech espresso machine, which comes with a steamer.) If you don’t have a steaming pitcher or steamer, you can heat them up in the microwave or stovetop.
- Pull your double shot of espresso. If you don’t have an espresso machine, you can use 1/2 a cup of STRONG coffee instead.
- Pour your chocolate peppermint sauce mixture into a coffee mug, then top it with the espresso. Stir well. Pour the steamed oat milk/Nutpods on top and stir until well combined. Optional: top with dairy-free whipped cream & chocolate shavings and/or crushed peppermint!
Pro tip: If you’re more of an iced latte fan, you can easily make one swap to make this an iced latte. You have a couple of options… Either skip the entire milk-steaming step and just pour cold oat milk and ice instead. Or if you change your mind after already making the hot latte… Just give it 10-20 minutes to cool down and pour it over a glass of ice. Voila! A yummy iced peppermint mocha.
