Dairy-Free Chocolate Peppermint Mocha

The perfect holiday coffee drink recipe - the peppermint mocha! Only a non-dairy healthier version, so you can sip these all day & night without a crazy sugar rush. Delicious!

Equipment

  • Espresso machine (recommended inexpensive one above)

Ingredients

  • 2 shots espresso
  • 1 cup oat milk (+ 2 tbsp) (you can substitute with your milk preference)
  • 1 oz Nutpods creamer (use code VITALITYVIXENS for 15% off)
  • 1/4 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1 tsp cocoa powder
  • 1 tbsp chocolate chips
  • 1-2 tbsp honey (use 2 if you like sweeter coffee)
  • (dairy-free) whipped cream & chocolateshavings and/or crushed peppermint (optional - for topping!)

Instructions

  • In a small saucepan over low heat, combine the chocolate chips, cocoa powder, 2 tbsp oat milk, peppermint & vanilla extracts, and honey. Stir occasionally and keep it on the heat until everything melts together into a saucy consistency. If you need to, bump the heat up 1 or 2 notches.
  • Steam your oat milk & Nutpods creamer together inyour steaming pitcher. If you don't have a steaming pitcher or steamer, you canheat them up in the microwave or stovetop.
  • Pull your double shot of espresso. If you don't have an espresso machine, you can use 1/2 a cup of STRONG coffee instead.
  • Pour your chocolate peppermint sauce mixture into a coffee mug, then top it with the espresso. Stir well. Pour the steamed oat milk/Nutpods on top and stir until well combined. Optional: top with dairy-free whipped cream & chocolate shavings and/or crushed peppermint!
