I realized December 10th that there were only 2 weeks left until Christmas Eve and I’ve still hardly made any Christmas recipes… (besides the GF peppermint chocolate muffins and 2 latte recipes: vegan eggnog & peppermint mocha). This year has been a whirlwind & incredibly heavy more often than most years – but somehow has still flown by. So, what I’m trying to say is that I needed to come up with some holiday recipes before it was TOO LATE. So, I’m sharing with you: my gluten-free eggnog cookies!!
Gluten-Free Eggnog Cookies! (Vegan Version)
These turned out so soft & dreamy, like those fluffy iced sugar cookies from the grocery store. I stored mine in the fridge after & honestly they were even better cold. These are the perfect cookie for anyone in your life with a gluten or dairy intolerance, looking for a sweet treat for the holidays!
Ingredients You’ll Need:
- 2 ¼ cups gluten-free flour
- 1 tsp baking soda
- 1 tsp salt
- 1.5 tsp vanilla extract
- 3/4 cup Nutpods Holiday Nog (use code “vitalityvixens” on their site for 15% off!)
- 1 cups of sugar
- 1/2 cup brown sugar
- 2 egg yolks *for the vegan version – use 2 flax eggs (2.5 tbsp water + 1 tbsp flaxseed, per egg)*
- 1/2 cup butter (melted) (use dairy-free butter alternative for a non-dairy cookie)
Icing:
- 3/4 cup store-bought cream cheese icing (make sure it’s a dairy-free icing if you want the fully dairy-free version!)
- 1/8 cup Nutpods Holiday Nog (use code “vitalityvixens” on their site for 15% off!)
- Christmas-themed sprinkles (for topping!)

Directions:
- Preheat the oven to 350 F.
- Add your dry ingredients (gluten-free flour, baking soda, salt) to a plate. Set aside.
- In a large mixing bowl, add your wet ingredients (vanilla, Nutpods Holiday nog, egg yolks, melted butter, sugar, brown sugar) and mix on medium until well combined.
- Add in your dry ingredient mixture, slowly, mixing on low, until fully combined.
- Scoop cookie dough onto an ungreased baking sheet and bake for 10-12 minutes. Let them cool for 5-10 minutes on the baking sheet before transferring them to a cooling rack, to cool completely.
- Mix the vanilla icing & 1/8 cup of Holiday Nog together in a small bowl. Once the cookies are fully cooled, top with icing mixture & sprinkles!
