Ingredients

  • 2 ¼ cups gluten-free flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1.5 tsp vanilla extract

  • 1 cups of sugar
  • 1/2 cup brown sugar
  • 2 egg yolks *for the vegan version - use 2 flax eggs (2.5 tbsp water + 1 tbsp flaxseed, per egg)*
  • 1/2 cup butter (melted) (use dairy-free butter alternative for a non-dairy cookie)

ICING

  • 3/4 cup store-bought cream cheese icing (make sure it’s a dairy-free icing if you want the fully dairy-free version!)

Instructions

  • Preheat the oven to 350 F.
  • Add your dry ingredients (gluten-free flour, baking soda, salt) to a plate. Set aside.
  • In a large mixing bowl, add your wet ingredients (vanilla, Nutpods Holiday nog, egg yolks, melted butter, sugar, brown sugar) and mix on medium until well combined.
  • Add in your dry ingredient mixture, slowly, mixing on low, until fully combined.
  • Scoop cookie dough onto an ungreased baking sheet and bake for 10-12 minutes. Let them cool for 5-10 minutes on the baking sheet before transferring them to a cooling rack, to cool completely.
  • Mix the vanilla icing & 1/8 cup of Holiday Nog together in a small bowl. Once the cookies are fully cooled, top with icing mixture & sprinkles!
