So I was planning on making a Valentine’s Day recipe (cookies, donuts, etc.)… But that didn’t happen. Why, you ask? Because I had the BIGGEST banana bread craving known to man. So I decided to whip up this gluten-free peanut butter chocolate bread instead! And boy, am I glad I did!

I’ve been snacking on this banana bread all week because it is that delicious. I wanted to munch the whole thing down in the first day – but I held off because *will power*. JK, I just wanted it to last longer. 😉
This recipe is lower sugar than your typical banana bread, along with being gluten-free, and packed with nutrients from the Greek yogurt, bananas, peanut butter, and dark chocolate. A little healthy spin on your typical banana bread.

Ingredients
- 1 egg
- 1/4 cup plain Greek yogurt (2% or whole milk)
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1/4 cup brown sugar
- 2 medium mashed bananas (about 1/2 cup mashed)
- 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1 cup gluten-free flour (The gluten-free flour I bought is a 1:1 ratio to regular flour. Any substitutions for other gluten-free flour [coconut, oat, etc.] should be made based on their own ratio to regular flour.)
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/8 cup peanut butter
- 1/2 cup dark chocolate chips
Directions
- Preheat your oven to 325 F. Coat a 9″ loaf pan with butter or non-stick baking spray. (I used the Farberware 9″ loaf pan and coconut oil spray)
- Whisk together the wet ingredients (egg, Greek yogurt, vegetable oil, honey, brown sugar, mashed bananas, and vanilla extract).
- In a small bowl, add the dry ingredients (gluten-free flour, baking soda, cinnamon, salt).
- Slowly pour the dry ingredient mixture into the wet ingredients, stirring constantly until mixed together with no clumps. Fold in dark chocolate chips.
- Pour the mixture into your greased baking pan. On top, drizzle peanut butter. Bake for 60-70 minutes, or until a toothpick comes out clean.
- Let cool for 20-30 minutes in the pan and then transfer the loaf to a cooling rack to cool completely.
