One thing I love more than healthy meals? CONVENIENT healthy meals! I love eating healthy, but let’s face it, ya girl’s lazy when it comes to cooking. If I had a personal chef to whip me up a nutritious and delicious shrimp dinner every time I was hungry, I’d be in heaven. But sadly, that’s not the case, and I’m stuck in the real world cooking for myself.
30-Minute Sheet Pan Shrimp & Veggies
Whenever I look up recipes, I always search the words “easy”, “simple”, or “under 30 minutes”. For example, my Easy 30-Minute Chickpea Pasta Recipe fits all these requirements! If something comes up that looks yummy, but I go into the recipe and it’s supposed to take 2 hours, there’s just no way. I would rather spend my down time doing other things, to be completely honest. If I have 30 minutes on a weeknight to cook something healthy, I’m a happy camper. For more inspiration, here’s an awesome list from Food Network of a bunch of healthy meals you can cook in less than 40 minutes.
So I wanted to come up with a recipe that was easy, repeatable, healthy, and delicious, all rolled into one. I love shrimp so that’s always a go-to. Veggies are filled with fiber & nutrients, so they pack a nutritious punch to this meal. I also used plenty of butter and olive oil, so everything tastes extra yummy and has some healthy fats. You could serve this with rice or some sort of bread to add in some carbs, but we didn’t have anything on hand and I wasn’t going to run to the store past 7 pm. So I made cookies instead to fill all my carb needs. 😉
YUM COOKIES
These were another extremely easy/convenient recipe (not really a recipe). I just used Pillsbury pre-cut cookie dough and lined it out on a baking sheet. I used a decorating tip on the frosting bag to make cute little “hats” for the cookies and drowned them in sprinkles! They turned out so decadent and so yummy. I could only eat 1.5 which is very low compared to my normal cookie eating abilities!
As far as the shrimp & vegetable recipe goes, it was so easy to make. If you have 30 minutes to throw this together with minimal work, you’re good to go! The shrimp I bought was already peeled and de-veined, so that made it easier as well. The flavors of the spices, veggies, lemon, and shrimp all paired together so well. I’m probably going to be making this on repeat for a few weeks. And it also ended up being way more than enough for the two of us, so we had leftovers for the next day. & I must say it is just as tasty heated up the day after. 🙂

Easy One Pan Shrimp & Veggies
Equipment
- Oven
- Sheet Pan
Ingredients
- 1 lb peeled & deveined raw shrimp (frozen and thawed)
- 1 lb green beans
- 1 small onion
- 1 small tomato
- 1/2 medium lemon
- 1 tbsp unsalted butter
- 4 tbsp olive oil
- salt & pepper (to taste)
- garlic powder (to taste)
- Italian seasoning (to taste)
Instructions
- Preheat oven to 400 F & thaw out shrimp if frozen. Wash all produce.
- Cut the ends off green beans. Combine green beans with 1 tbsp olive oil and salt, pepper, and garlic to taste. Put on one half of a lined sheet pan. Bake green beans for 10 mins on their own.
- Dice up onion & tomatoes and cut lemon in half.
- Once the green beans are done cooking, add diced onion to the same side of the pan. Add 1 tbsp of olive oil, salt & pepper to taste, and mix up with green beans.
- When the shrimp is thawed out, add to the other side of the sheet pan with tomatoes. Drizzle with the rest of the olive oil, all the lemon juice, and all the seasonings to taste. Mix up well.
- Once everything is on the pan, cut 1 tbsp of butter into fourths and add it on top throughout. Bake everything in the oven 10 minutes or until shrimp is pink & cooked through.
- Move pan to top rack and broil for 2-3 minutes, with the oven slightly opened at the top. After you take the pan out, mix everything up with a spatula to make sure the butter & spices are evenly distributed. Serve on its own or with rice or quinoa!
