Instructions
Preheat oven to 400 F & thaw out shrimp if frozen. Wash all produce.
Cut the ends off green beans. Combine green beans with 1 tbsp olive oil and salt, pepper, and garlic to taste. Put on one half of a lined sheet pan. Bake green beans for 10 mins on their own.
Dice up onion & tomatoes and cut lemon in half.
Once the green beans are done cooking, add diced onion to the same side of the pan. Add 1 tbsp of olive oil, salt & pepper to taste, and mix up with green beans.
When the shrimp is thawed out, add to the other side of the sheet pan with tomatoes. Drizzle with the rest of the olive oil, all the lemon juice, and all the seasonings to taste. Mix up well.
Once everything is on the pan, cut 1 tbsp of butter into fourths and add it on top throughout. Bake everything in the oven 10 minutes or until shrimp is pink & cooked through.
Move pan to top rack and broil for 2-3 minutes, with the oven slightly opened at the top. After you take the pan out, mix everything up with a spatula to make sure the butter & spices are evenly distributed. Serve on its own or with rice or quinoa!
