Hi everyone! I’m back with another tasty dinner recipe. This baked balsamic chicken with have your taste buds whirling. And it’s healthy as well, so you’ll feel great about eating it any day (or every day hehe).
Delicious Baked Balsamic Chicken
I love baking chicken in the oven over any other way of cooking it. It’s easy, convenient, and tastes delicious if you do it right! I’ve definitely had my fair share of chicken recipes gone bad, because I wasn’t doing things exactly right. But with this one, it turned out perfectly! In my humble opinion…
The Prep
These were honestly so easy to make for how delicious they turned out. To get the best flavor, it’s important to marinade the chicken in the balsamic mixture for about an hour before cooking it. So you’ll want to do that when you get home from work (or about an hour before you’re going to want to eat).
I mixed up the balsamic, brown sugar, olive oil, and all the other seasonings in a bowl. Then added the chicken and let it sit in the fridge for an hour. While the chicken was marinading, I prepped the avocado, red onion & tomato topping. Then I preheated the oven to 450 and sprayed a baking sheet with olive oil spray.
Baking the Chicken
Once the chicken is done marinading, melt some butter (or you can use olive oil) and spread it on both sides. This part is so important for the flavor and crispy roasted chicken texture. Trust me, it makes a world of difference!
Bake the chicken for 15-18 minutes or until cooked through. Check it with a thermometer to make sure it hit at least 165 F. Then add a slice of cheese to each piece and pop it back in to broil for 1-2 minutes.
Let’s just ignore the fact that the pan looks like something died on it… okay? Haha on a real note, I think I added a little too much extra balsamic on the pan. But it turned out delicious so was it really wrong?! I don’t think so. 😉
Once the cheese is nice and melted, the chicken is good to take out and plate. Add on as much avocado tomato mixture as you’d like. Along with some extra balsamic if you want to add that extra flavor. And you’re good to go! A healthy, delicious, baked chicken dish.
Baked Balsamic Chicken with Avocado
Equipment
- Oven
Ingredients
- 5 chicken breasts (small to medium size)
- 3/4 cup balsamic vinegar
- 1/4 cup brown sugar
- 4 cloves minced garlic
- 2 tbsp olive oil
- 1 tsp oregano
- 1 tsp basil
- 1 tsp dried parsley
- 1/2 tsp salt
- 1 tsp pepper
Avocado Tomato Topping
- 3 small avocadoes
- 1/2 medium red onion
- 2 medium tomatoes
- 1 tsp Italian seasoning (or you can use the basil, oregano, parsley combo)
- salt & pepper (to taste)
Everything Else
- 1 tbsp unsalted butter
- 4-5 slices mozzarella or provolone cheese
Instructions
- Mix up all top ingredients (besides chicken) in a large bowl.
- Add in chicken and let marinade in the fridge for one hour. Flip/move around chicken half way through, to make sure it’s entirely covered.
- Preheat oven to 450 F & spray a baking sheet/pan with cooking spray (or rub with olive oil).
- Dice up avocados, red onion, & tomatoes and put in a bowl. Mix with Italian seasoning and salt & pepper to taste. Melt 1 tbsp of butter.
- Once chicken is done marinading, place on prepped baking sheet. Rub both sides with the melted butter (or olive oil if you prefer). Drizzle a little extra of the marinade on top.
- Bake for 15-18 minutes depending on thickness of chicken breasts. Check with a thermometer to make sure chicken is cooked through. Once chicken is cooked through, add cheese on top and broil for an additional 1-2 minutes until cheese is melted and gooey.
- Remove from pan and plate. Add veggie mixture and extra balsamic if you’d like. Enjoy!
