Baked Balsamic Chicken with Avocado

Equipment

Ingredients

  • 5 chicken breasts (small to medium size)
  • 3/4 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 4 cloves minced garlic
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1 tsp pepper

Avocado Tomato Topping

  • 3 small avocadoes
  • 1/2 medium red onion
  • 2 medium tomatoes
  • 1 tsp Italian seasoning (or you can use the basil, oregano, parsley combo)
  • salt & pepper (to taste)

Everything Else

  • 1 tbsp unsalted butter
  • 4-5 slices mozzarella or provolone cheese

Instructions

  • Mix up all top ingredients (besides chicken) in a large bowl.
  • Add in chicken and let marinade in the fridge for one hour. Flip/move around chicken half way through, to make sure it’s entirely covered.
  • Preheat oven to 450 F & spray a baking sheet/pan with cooking spray (or rub with olive oil).
  • Dice up avocados, red onion, & tomatoes and put in a bowl. Mix with Italian seasoning and salt & pepper to taste. Melt 1 tbsp of butter.
  • Once chicken is done marinading, place on prepped baking sheet. Rub both sides with the melted butter (or olive oil if you prefer). Drizzle a little extra of the marinade on top.
  • Bake for 15-18 minutes depending on thickness of chicken breasts. Check with a thermometer to make sure chicken is cooked through. Once chicken is cooked through, add cheese on top and broil for an additional 1-2 minutes until cheese is melted and gooey.
  • Remove from pan and plate. Add veggie mixture and extra balsamic if you’d like. Enjoy!
