Sometimes you just need a healthy dinner that you can throw together in 5 minutes… (By sometimes, I mean 99% of the time for me.) But it’s not always easy to find quick recipes that are healthy and actually taste good. Which is why I was so dang excited with how simple and delicious this Asian chicken salad turned out! I think y’all will love it too…
Simple & Healthy Asian Chicken Salad
The bulk of making this recipe consists of cooking the chicken and chopping up the vegetables. We made a big portion of chicken, so making this for leftovers in the following days is 10x quicker.
For this recipe, you’ll just need the following ingredients:
- Asian-style spicy peanut vinaigrette (I got this at Trader Joe’s but you can use any Asian-style dressing!)
- Romaine
- Asian-style chopped salad kit (cabbage, celery, green onion, carrot)
- Sugar snap peas (sliced)
- Red bell pepper (chopped into thin pieces)
- Carrots (chopped into thin pieces)
- Chicken (diced & cooked in olive oil, salt & pepper)
- Optional toppings: sliced almonds, wonton strips, sliced avocado
I’m not even going to put amounts on this recipe because it’s completely up to you how much of each veggie you use. It’s all about personal preference. Check out the recipe below for the total amount of ingredients we bought. Then add as much as you’d like to each individual salad.
For the chicken, we cooked about 2 lbs total of diced chicken breast. You could also easily sub out the chicken for tofu or shrimp if you’re looking for a more vegetarian/pescatarian friendly-recipe!
Directions
Dice your chicken and cook it on the stove, in olive oil, until cooked through. Add salt & pepper to taste.
Add the romaine & Asian-style salad kit (just the veggies) to a bowl. Top with sugar snap peas, bell pepper, carrots, and cooked chicken. Top with salad dressing, and optional toppings above!

- ~2 lbs Chicken diced & cooked in olive oil, salt & pepper
- Sliced almonds, wonton strips, sliced avocado (optional toppings)
