In honor of the SUPER Bowl being in Tampa this Sunday, I decided to whip up some SUPER grain chicken burrito bowls! Jk, I just thought of that and couldn’t help myself. I know, I should’ve been a comedian instead of a blogger, what was I thinking? In all seriousness, these bowls are so tasty & healthy (not to mention incredibly easy to whip up in under 30 minutes). What more could you want? Let’s get right into it!
Easy Super Grain Chicken Burrito Bowls
These babies have just the right amount of spice from the fire-roasted tomatoes and green chiles. (Not too spicy or I can’t hang.) They’re jam-packed with vitamins & minerals & incredibly filling/satisfying, while not leaving you feeling too stuffed. I’m going to be making these bowls on repeat this week (as soon as I finish all the bowls I already have meal prepped!)

- 1 cup super grain blend (quinoa, millet & buckwheat)
- 2 cups chicken broth
- 1 lb chicken breast
- 4 oz can fire-roasted green chiles
- 1 can (14.5 oz) fire-roasted tomatoes
- 1 can of black beans
- 1 can corn
- 1/4 cup cilantro
- 1/4 lime
- salt & pepper (to taste)
- olive oil (for pan)
toppings
- plain whole-milk Greek yogurt (a healthier alternative to sour cream)
- shredded Mexican cheese
- 1/8 lime
- 1/2 avocado
directions
- Cook super grain blend according to package instructions, but substitute chicken broth for water.
- Heat olive oil in a large pan on medium heat. Dice your chicken and add it to the pan, cooking until fully cooked through (165 F). Drain pan.
- To the same pan with the chicken, add in black beans (rinsed), green chiles, tomatoes, cilantro (chopped), and corn. Squeeze lime on top & season with salt & pepper. Cook, stirring occasionally until heated through (about 5 minutes).
- Add all ingredients to a bowl & top with plain greek yogurt, avocado, lime, and cheese!
I have been pleasantly surprised shopping the Whole Foods delivery on Amazon! I bought all of these ingredients on there (minus the green chiles), didn’t have to leave my house, and it was free delivery. I also always assumed that Whole Foods was super expensive but honestly, it only is for certain specialty things. All of these groceries were comparable in price to shopping at Target or Trader Joe’s (where I normally shop).
Especially this past year, shopping online for groceries has been a game changer. Especially when it’s free same-day delivery… You really can’t beat it.
