Ingredients

Bowl

  • 1 cup super grain blend quinoa, millet & buckwheat
  • 2 cups chicken broth
  • 1 lb chicken breast
  • 4 oz can fire-roasted green chiles
  • 1 can 14.5 oz fire-roasted tomatoes
  • 1 can of black beans
  • 1 can corn
  • 1/4 cup cilantro
  • 1/4 lime
  • salt & pepper to taste
  • olive oil for pan

Toppings

  • plain whole-milk Greek yogurt a healthier alternative to sour cream
  • shredded Mexican cheese
  • 1/8 lime
  • 1/2 avocado

Instructions

  • Cook super grain blend according to package instructions, but substitute chicken broth for water.
  • Heat olive oil in a large pan on medium heat. Dice your chicken and add it to the pan, cooking until fully cooked through (165 F). Drain pan.
  • To the same pan with the chicken, add in black beans (rinsed), green chiles, tomatoes, cilantro (chopped), and corn. Squeeze lime on top & season with salt & pepper. Cook, stirring occasionally until heated through (about 5 minutes).
  • Add all ingredients to a bowl & top with plain greek yogurt, avocado, lime, and cheese!
