Ingredients

1cupsuper grain blendquinoa, millet & buckwheat
2cupschicken broth
1lbchicken breast
4ozcan fire-roasted green chiles
1can14.5 oz fire-roasted tomatoes
1can of black beans
1can corn
1/4cupcilantro
1/4lime
salt & pepperto taste
olive oilfor pan
Toppings
plain whole-milk Greek yogurta healthier alternative to sour cream
shredded Mexican cheese
1/8lime
1/2avocado
Instructions
Cook super grain blend according to package instructions, but substitute chicken broth for water.
Heat olive oil in a large pan on medium heat. Dice your chicken and add it to the pan, cooking until fully cooked through (165 F). Drain pan.
To the same pan with the chicken, add in black beans (rinsed), green chiles, tomatoes, cilantro (chopped), and corn. Squeeze lime on top & season with salt & pepper. Cook, stirring occasionally until heated through (about 5 minutes).
Add all ingredients to a bowl & top with plain greek yogurt, avocado, lime, and cheese!
