It’s been a while since I’ve posted a recipe on here, but I wanted to get back into the swing of things. I heard a YouTuber mention having oatmeal bars the other day and I knew I needed to whip up a new recipe. You can’t really go wrong with Nutella, so I came up with this delish Nutella baked oatmeal bars recipe! Top it with bananas or berries and serve a coffee on the side for the perfect healthy breakfast.

Basically any breakfast recipe I come up with will include chocolate. Any excuse to have chocolate in the morning – I’ll take it. And this one just so happens to be chock full of it.
It’s also full of nutritious foods like oatmeal, bananas, berries (on top), and sweetened with only honey.
You can make this recipe in 30 minutes or less and have it ready for the whole week of breakfasts. I saved these in the fridge for the entire week and they kept really well. Just throw in the oven for ~5 minutes in the morning, and you’ll have a chocolatey warm breakfast!
I’ve also eaten these as a healthy dessert a few times throughout the week when my post-dinner sweet tooth kicks in. (It kicks in every night, it just varies if I’ll pick a healthier option vs. stuff my face with cookies and ice cream…)
ingredients
- 2 cups old fashioned oats
- 2 mashed medium bananas
- 1 tsp pure vanilla extract
- 1/2 tsp hazelnut extract
- 2 tbsp Nutella (+ extra for drizzle)
- 1/2 cup dark chocolate chips
- 1 tsp cocoa powder
- 3 fl oz oat milk
- 1/2 tsp salt
- 3 tbsp honey
directions
Preheat your oven to 350 F. Grease an 8×8 baking dish and set it aside. In a medium bowl, mix together all the ingredients until thoroughly combined. Pour into the baking dish and gently press down with a spoon until even. Bake in the oven for 22 minutes, or until slightly browned and no wet spots remain. Top with a drizzle of Nutella and fruit, if desired.
