Ingredients

  • 1 egg
  • 1/4 cup plain Greek yogurt (2% or whole-milk)
  • 1/4 cup vegetable oil
  • 1/2 cup sugar (or honey)
  • 1/4 cup brown sugar
  • 2 medium mashed bananas
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 cup gluten-free flour (The gluten-free flour I bought is a 1:1 ratio to regular flour. Any substitutions for other gluten-free flours [coconut, oat, etc.] should be made based on their own ratio to regular flour.)
  • 1/2 tsp cinnamon + extra for topping
  • 1/2 tsp salt
  • 1/4 cup chopped walnuts
  • 1/2 cup peeled & diced apples (about 1 small/medium apple)

Instructions

  • Preheat your oven to 325 F. Coat an 8" loaf pan with butter or non-stick baking spray.
  • Whisk together the wet ingredients (egg, Greek yogurt, vegetable oil).
  • To the same bowl, add in brown sugar, sugar, mashed banana, and vanilla extract. Stir the mixture until combined. 
  • On a plate or small bowl, add the dry ingredients (gluten-free flour, baking soda, cinnamon, salt) and mix together. 
  • Slowly pour the dry ingredient mixture into the wet ingredients, stirring constantly until mixed together with no clumps. Add the diced apples to the mixture and stir everything together. 
  • Pour the mixture into your greased baking pan. On top, add walnuts and sprinkle with cinnamon (or cinnamon sugar). Bake for 60-70 minutes, or until a toothpick comes out clean. 
  • Let cool for 20-30 minutes in the pan and then transfer the loaf to a cooling rack, to cool completely.
