Ingredients
1egg
1/4cupplain Greek yogurt (2% or whole-milk)
1/4cupvegetable oil
1/2cupsugar (or honey)
1/4cupbrown sugar
2medium mashed bananas
1/2tspvanilla extract
1/2tspbaking soda
1cupgluten-free flour(The gluten-free flour I bought is a 1:1 ratio to regular flour. Any substitutions for other gluten-free flours [coconut, oat, etc.] should be made based on their own ratio to regular flour.)
Preheat your oven to 325 F. Coat an 8" loaf pan with butter or non-stick baking spray.
Whisk together the wet ingredients (egg, Greek yogurt, vegetable oil).
To the same bowl, add in brown sugar, sugar, mashed banana, and vanilla extract. Stir the mixture until combined.
On a plate or small bowl, add the dry ingredients (gluten-free flour, baking soda, cinnamon, salt) and mix together.
Slowly pour the dry ingredient mixture into the wet ingredients, stirring constantly until mixed together with no clumps. Add the diced apples to the mixture and stir everything together.
Pour the mixture into your greased baking pan. On top, add walnuts and sprinkle with cinnamon (or cinnamon sugar). Bake for 60-70 minutes, or until a toothpick comes out clean.
Let cool for 20-30 minutes in the pan and then transfer the loaf to a cooling rack, to cool completely.
