Delicious & healthy gingerbread energy balls, perfect for the holiday season or anytime of year. Chock full of healthy ingredients like flaxseed, oats, and almond butter, as well as delicious gingerbread spices, with a yummy cream cheese icing drizzle.
1cupgluten-free oatsuse regular oats if you're not needing this to be GF
1/2cupalmond butter
1/2cupflaxseed
1/3cupof honeyyou can sub maple syrup to make fully vegan
1tspvanilla extract
1/2tbspcinnamon
1/2tbspallspice
1/2tbspginger
1/4tbspnutmeg
1/4tbspground cloves
holiday sprinkles for topping!(optional)
Cream Cheese Drizzle
2ozsoftened cream cheese (use non-dairy cream cheese for vegan substitution)
1/2tspvanilla extract
1/4cuppowdered sugar
1-2tbspFrench Vanilla Nutpods oat milk creamer
Instructions
Gingerbread Balls
Mix all of the above ingredients together in a medium bowl. Cover the bowl and chill it in the fridge for about 1 hour, or until it is fully chilled.
Once the mixture is chilled, take it out of the refrigerator and roll it into 1-inch balls. Then top with the cream cheese drizzle (below) & sprinkles.
Cream Cheese Drizzle
Beat the cream cheese and vanilla extract together until smooth & creamy. Slowly add in the powdered sugar, while still beating the mixture.
Stir in your Nutpods oat milk creamer, 1 tbsp at a time. Add in as much as you need until it is the right consistency (to your preference) for the drizzle.
