Gluten-Free Gingerbread Energy Balls (Vegan Option)

Ingredients

  • 1 cup gluten-free oats use regular oats if you're not needing this to be GF
  • 1/2 cup almond butter
  • 1/2 cup flaxseed
  • 1/3 cup of honey you can sub maple syrup to make fully vegan
  • 1 tsp vanilla extract
  • 1/2 tbsp cinnamon
  • 1/2 tbsp allspice
  • 1/2 tbsp ginger
  • 1/4 tbsp nutmeg
  • 1/4 tbsp ground cloves
  • holiday sprinkles for topping! (optional)

Cream Cheese Drizzle

  • 2 oz softened cream cheese (use non-dairy cream cheese for vegan substitution)
  • 1/2 tsp vanilla extract
  • 1/4 cup powdered sugar
  • 1-2 tbsp French Vanilla Nutpods oat milk creamer

Instructions

Gingerbread Balls

  • Mix all of the above ingredients together in a medium bowl. Cover the bowl and chill it in the fridge for about 1 hour, or until it is fully chilled.
  • Once the mixture is chilled, take it out of the refrigerator and roll it into 1-inch balls. Then top with the cream cheese drizzle (below) & sprinkles.

Cream Cheese Drizzle

  • Beat the cream cheese and vanilla extract together until smooth & creamy. Slowly add in the powdered sugar, while still beating the mixture.
  • Stir in your Nutpods oat milk creamer, 1 tbsp at a time. Add in as much as you need until it is the right consistency (to your preference) for the drizzle.
